Palm Restaurant, Newlyn: relaxed and friendly but with very high standardsDavid Costin, Chef Proprietor of Palm in Newlyn, has always had a clear idea of the kind of restaurant he wanted to own. "I enjoy good food," he explained, "and I wanted a restaurant where guests could enjoy good food, well presented and served, in a relaxed atmosphere. "At Palm the food is freshly cooked to order using the best possible ingredients, which usually means Cornish. I buy local produce wherever possible and cook from the basic ingredients making my own stocks and sauces." This uncompromising attitude towards producing quality food is already paying dividends. At the remarkable age of 21 David is already establishing a reputation for excellent food. David grew up in Cornwall and trained to become a chef at Cam-borne College. He worked in several prestigious hotels in Cornwall before leaving the county to widen his experience, working in several highly regarded country house hotels as far afield as Aberdeenshire. However, David believes that Cornwall is a unique place to live and work and it was always his ambition to return home to open his own restaurant. Palm in Newlyn is also a very special place. The spacious dining room has a stylish decor enhanced by contemporary paintings and sculptures by local artists. In the evening this room is candlelit and provides the perfect setting for David's modern English Style of cuisine. Having easy access to quality fish was one attraction of the location of the restaurant. Naturally the menu features Newlyn fish, which provides the daily changing specials. However, there is also a good selection of meat and poultry dishes, and vegetarians are not forgotten. The separate wine bar area is full of character with a lofty beamed ceiling and exposed stonework. Here guests can relax with a pre-dinner drink whilst they peruse the menu, or they can just enjoy a bottle of wine from the extensive list with perhaps a platter of local cheeses. Although Palm has only been open for a few months, the number of guests returning for repeat visits confirms that David has created the type of restaurant that people enjoy. In that the menu changes on a regular basis, returning customers can always find a new dish to delight them, such as confit of Barbary duck leg, buttered spinach and red wine sauce or saddle of rabbit, Savoy cabbage and cep jus. The ambience may be relaxed and friendly but behind the
scenes the standards are very high. "Attention to detail is very important,"
David said firmly. "Palm is no place for a 'that will do' attitude.
I want everything to be perfect for every guest because every guest
is important." It will undoubtedly be this uncompromising attitude to
quality that will enable David at Palm to create a reputation that will
make it one of the destination restaurants in Cornwall. Palm is situated
at 4-6 New Road Newlyn and is open for lunch and dinner throughout the
year, please phone 01736-363446 for details. ApologiesApologies to Karen and Mark Curtis for getting their new member details wrong. It should read:

Join the ChamberThe Chamber of Commerce represents the interests of local business with the County, District and Town Councils, Government agencies and public bodies. It actively campaigns on issues affecting the business community as well as issues affecting the community as a whole. This requires finances and direct involvement by committed people, and deserves the support of every business in the region. Our Chairman is coordinator of the West Cornwall Group of Chambers and the Cornwall Business Partnership. He is a member of the Priority Management Group 3, which approves Objective One funding in the area of Learning and Skills development He is also a member of the Penzance Regeneration Steering Group that has worked on the submission of an Objective One bid to greatly enhance the prosperity of the town and its inhabitants.
